Recipe: Watermelon, Salt and Chilli Granita

It's the weekend! And not any old weekend at that, as daylight savings starts on Sunday. Watermelon, Salt and Chilli Granita



ingredients

1kg fresh seedless watermelon, skin removed and roughly chopped
1tbsp freshly squeezed lime juice
1/4 tsp salt
1/4 tsp (plus a teeny pinch extra) dried chilli flakes

method

Add the roughly chopped watermelon, fresh lime juice, salt and chilli flakes to a blender or food processor, and blend until the mixture forms a pulpy consistency.  Pass the mixture through a sieve, and using the back of a spoon, press firmly as much liquid as you can.  Discard the left over pulp.

Pour the sieved liquid into a wide metal baking tray and freeze for approximately 2-3 hours.

When ready to serve, using a fork scrape granita into shards,serve in dessert glasses and sprinkle over a few chilli flakes.
