one for the kids.....x

high fibre mini chic chip muffins

1 egg
1/4 rice bran oil
1/4 cup honey
3/4 wholemeal self-raising flour
1/4 desiccated coconut
1/3 cup milk
1/3 cup dark chic chips

whisk egg, oil and honey until honey is dissolved into mixture
stir in flour, coconut and milk
add chic chips
put into mini muffin cases
bake in oven for 15 mins or so until risen, golden and bounce back when pressed

(I doubled mixture, no sugar and no butter and kids loved them!)
